Healing & Hearty Spiced Vegetable Soup
This soup is a great alternative to Kitchari when you are in a period of cleansing or fasting, or as a warming lunch or dinner with a piece of toast on a cold day..
Ingredients:
2 -3 cups of vegetables of choice, prepped and chopped
3 tbsp sliced onions
2 cloves garlic, chopped
1 tbsp ghee or oil
½ - 1 tsp each cumin and coriander powder
1/2 tsp each turmeric powder and cracked blacked pepper
Salt to taste
2 tsp black peppercorns
3-4 cups of water
Fresh coriander leaves and stalk, chopped
Method:
Warm the ghee or oil in a saucepan, and sautee onions until fragrant.
Add vegetables and after a few minutes, add the spices and garlic. Add water and bring to the boil.
Once veggies are soft and cooked, remove from stove and gently mash vegetables (if desired) with a potato masher, leaving it slightly chunky. There should also still be water in the saucepan to make the ‘soup’
Serve warm- hot by itself or with a few tablespoons of pre-boiled rice and garnish with fresh coriander to serve.
Make 4-5 serves.
