Ayurvedic Oatmeal Raisin Cookies

As we head into Autumn and more indoorsy weather, there is nothing better than the smell of fresh baked cookies through the home. It’s comforting in all the right ways. But it can be hard to find good recipes that not only taste great but complement the ayurvedic routines we are trying to maintain. Linda Banchek’s Cooking for Life gave me the perfect balance of both with this one.

Nutritious and incredibly tasty, these cookies travel well and are great for dunking. Both Vata and Pitta can eat these sweet, substantial, and slightly salty treats.…Enjoy the goodness and the aroma!

Makes 4 to 5 dozen

Ingredients:

½ cup ghee

⅓ cup oil to suit dosha (olive oil is ok for V and coconut oil for P)

1 cup brown sugar

⅓ cup yoghurt

2 Tbs water

2 tsp vanilla extract

1 ½ unbleached wheat flour

1 tsp baking soda

1 tsp baking powder

1 tsp salt

3 cups quick cooking oats

1 cup raisins (soaked overnight)

½ cup broken walnuts

Method:

Preheat oven to 290 C

Cream ghee and oil. Add sugar and cream together well.

Add the yoghurt, water, and vanilla.

In a separate bowl, mix together the flours, baking soda, baking powder and the salt. Start these dry ingredients into the sugar mixture.

Add the oats, the raisins and the nuts.

Mix with your fingers if it’s too thick to stir.

Shape the dough into balls and flatten slightly. Place them close together, but not touching, on greased baking sheets.

Bake for 15 minutes or until they are just turning brown underneath.
