Healing fresh green breakfast soup with coconut and spices
The way to a happy tummy, skin, eyes and body with a power packed bowl of goodness! Try this Ayurvedic green porridge of fresh greens, coconut milk, red rice and turmeric for breakfast or lunch..
The bitter greens balance out any internal heat and inflammation (not to mention chlorophyll in general being detoxifying, improving digestive health and oxidation), the coconut milk is nourishing and strengthening to the body, and the wonder spice turmeric is anti inflammatory, antioxidant, lowers risk of heart disease and improves brain function.
Traditionally enjoyed in Sri Lanka as ‘kola kande’. I’ve had lots of requests to share this recipe.. so here it is, below!
Ingredients:
2-3 cups of spinach or kale
1 tsp ghee
2 cloves garlic
1 cup water
Rock salt to taste
1 tsp peppercorns
1 tsp turmeric powder
1/4 cup coconut milk
1/2 cup pr-boiled red or brown rice
Method:
Blend greens to make a puree
Heat saucepan add half tsp ghee, and when heated add garlic, turmeric, peppercorns and spinach puree along with a little water to emulsify
Add rock salt to taste
Stir through until it starts to bubble
Add more water to make it 'soupy' to your taste and coconut milk and bring to the boil
When it is at boiling point add pre boiled brown or red rice for texture and taste
Remove from heat, cool it down and enjoy! :)
If you prefer it sweeter don't add turmeric - just follow rest of recipe eat with a cube of jaggery or coconut sugar.
